This flavorful cut of lamb is usually tied and rolled for a roast but may be butterflied for the barbecue, usually around 5 to 6 lbs. each. Note that with the bone removed slices may fall apart when cooked and sliced. Allowing the cooked roast to cool a bit before slicing will minimize this.
